So, on to the food! One of ChowGals biggest hits had to be those Buffalo Chicken Eggrolls -- they are sinful and stuffed with the most addicting food substance known to man, buffalo chicken dip. In an attempt to give you guys a little bit of a healthier option, here are some crunchy Buffalo Chicken Bites. These are baked but they still have an amazing crunch to them -- I have to admit, I was surprised when I took my first bite. These bites contain all the ingredients for buffalo chicken dip but with a lot more of the chicken part and a lot less of the cream cheese/ranch dressing/fat explosion. I found I needed to add more hot sauce than the recipe called for and then dipped the bites in additional hot sauce while wolfing them down. Yum. :)
Buffalo Chicken Bites
3 cups shredded cooked chicken
1/4 to 1/2 cup hot sauce (or to taste)
3 1/2 ounces cream cheese, softened
1 3/4 cups sharp shredded cheddar cheese
1/4 cup chopped green onions
1 cup all purpose flour
4 eggs, lightly beaten
3 to 4 cups Corn Flakes cereal, crushed
- Preheat oven to 350 degrees. Line a large baking sheet with parchment paper.
- In a large bowl, combine chicken, cream cheese, hot sauce, cheddar cheese and green onions.
- Roll a heaping tablespoon of mixture into a 1&1/2 inch ball and place onto a plate or separate baking sheet. Repeat with remaining mixture.
- Place flour in a shallow dish
- In a second shallow dish, place eggs.
- In a third shallow dish, place cornflakes
- Dip each chicken ball into the flour, then egg and ending with Corn Flakes. Place on prepared baking sheet and bake for 20 to 25 minutes. Serve warm with ranch or blue cheese dressing.
