Sometimes I just want a little something special for breakfast.... something unique that makes me feel like a star. So when I was going through my leftover ingredients from my tapas party on Friday night, I noticed I had half a baguette and some blueberries...hmmm....
Then it hit me...
French Toast Crostini!!!!
It’s cute, it’s tasty, it’s mini and most importantly, it’s special! It would be the perfect little treat on the table for a bridal breakfast or baby shower brunch because it’s so sweet and beautiful! Oh and it’s a cinch to make! So anytime you have a leftover day old baguette, slice that sucker up and top it with fresh fruit or butter and syrup!
French Toast Crostini w/ Blueberry Sauce (makes 2 servings)
For french toast:
1/2 leftover baguette, sliced into 8 pieces
3 eggs
1/4 c. milk
1/4 tsp vanilla extract
1/4 tsp cinnamon
pinch of salt
butter for cooking
For blueberry sauce:
1 c. fresh or frozen blueberries
1 tsp fresh grated lemon zest
1/4 c. sugar
1/4 c. water
- Begin with the sauce: combine sugar and water of medium heat and stir until dissolved. Add blueberries and zest and simmer over medium high heat until berries begin to burst and syrup thickens, about 10 minutes. Remove from heat and set aside.
- Whisk eggs, milk, vanilla extract, cinnamon and salt. Place a large skillet over medium heat and melt a pat of butter. Dip each baguette slice in egg mixture, being sure to fully saturate the bread. Add each slice to the hot skillet and cook until browned on each side, about 2 minutes per side. Remove to serving dish and top with blueberry mixture. Serve immediately.
